I’ve been eating LCHF for almost a year. I’ve lost 40 lbs, feel hungry less often, reversed my insulin resistance, have lots more energy but my cholesterol keeps jumping up, not just creeping, but taking huge leaps! ME: There is a sort of three-phase process the body goes through as it adapts to burning fat as its primary fuel.
